Salt substitutes sit next to the salt in most supermarkets and promise the obvious thing: the taste without the sodium. For a lot of households they work, and they are one of the few sodium reductions that requires no change in cooking habits at all. They are also the one swap in this whole subject that is not universally safe, and the packaging rarely makes that clear enough.
What is actually in the jar
Table salt is sodium chloride. Substitutes replace some or all of that with potassium chloride, which carries a salty taste of its own and no sodium. The category covers several quite different products.

The distinction matters when you log. A full substitute contributes nothing to your sodium total. A lite salt contributes about half of what the same amount of table salt would, which is a worthwhile cut and not a zero.
The taste question
Potassium chloride reads as salty, but many people also pick up a bitter or slightly metallic edge, and sensitivity to it varies genetically. The effect is strongest at high concentrations and when the substitute is added to something hot, which is why the same jar can seem fine sprinkled on a salad and off in a simmering pot.
Blends hide it better than pure potassium chloride, and cooked dishes hide it better than food seasoned at the table. If the first attempt tastes wrong, try a half-salt blend used during cooking before writing the category off.
The medical caveat that matters
None of that makes substitutes dangerous in general. For an adult with healthy kidneys and no relevant prescription, potassium from food and seasoning is not a problem, and most people fall well short of recommended potassium intake rather than over it. The point is that this is the one sodium decision where the right answer depends on your medical history rather than your grocery habits.
Reading the label on a substitute
- Check the sodium line — a lite or half salt still carries sodium, usually around half that of regular salt
- Check the potassium line if you have any reason to be watching potassium, and compare it against the 4,700 mg Daily Value
- Read the ingredients on “salt-free” blends — some still include celery salt, sea salt, or other sodium-bearing ingredients
- Note whether iodine has been removed, since iodized table salt is a meaningful iodine source for some people
Where a substitute actually helps
Remember where the sodium in a normal diet comes from. Seasoning added while cooking and at the table is a modest share of most people’s intake, so swapping the shaker is not by itself a large reduction. It becomes one in two situations: when you cook most of your food from scratch, so the salt you add is genuinely a large fraction of the total, and when you have been given a strict clinical target and need every available lever.
- Start with a blend, in cookingA half-salt used in the pot is the least noticeable entry point. Pure substitutes at the table are the most noticeable.
- Log it like anything elseA lite salt is a reduction, not an exemption. If you are tracking milligrams, the sodium in the substitute still belongs in the total.
A substitute changes what is in the shaker. It does not change what is in the soup can, and that is usually the bigger number.
